Course Description: Human nutrition as it pertains to dietary intake, chronic diseases from malnutrition, and life stage development.

- Students will analyze their current intake and plan appropriate dietary changes to correct the identified nutritional deficiencies and excesses to comply with nutritional standards for general good health.
- Students will critically evaluate and demonstrate knowledge of nutritional science to identify reliable nutrition information.
- Students will differentiate dietary choices for different life stages, activities, and performance.
- Students will identify the role nutrition specifically plays in chronic diseases, and how to improve health with dietary modifications.

Your instructor, Julie Eversaul, is a registered dietitian and adjunct instructor of human nutrition.
My skills are anchored in nutrition education and weight management for the pre-teen through older adult populations.
Anyone who knows me would likely agree my mission as a dietitian is to passionately share my nutrition knowledge with people of all ages to empower their sense of health, well-being, and confidence in decision making. Together we will explore facts, fiction, the symphony of activity between food and biochemistry and physiology, and how we will nurture our best performances in life through food choices.
When I am not feeding my soul with food, I embrace travel, nature, friends, and family. Life is definitely richer in what we do, where, and with whom.
