COURSE OBJECTIVES
Learn basic principles of sanitation and safety applied to commercial food service operations to comply with state regulations for sanitation certification. Includes certification knowledge of food borne illnesses and steps of food handling; personal hygiene, procurement, preparation, storage and service and equipment use, care, selection, and accident prevention.
COURSE OUTCOMES
Upon successful completion of this course, you will be able to know:
- causes of food borne illness;
- avoidance of food borne illness through the flow of food;
- food allergen information;
- seven principles of HACCP;
- and successfully be able to pass and become a certified ServSafe Food Safety Manager.
ABOUT ME
I have been teaching food safety for over 10 years to many companies and franchises across US.
I also travel to different countries to teach regarding public health issues.

ATTENDANCE
Attendance is key to do well in this class. At the beginning of each class I will be taking role. You are expected to attend the entire class session to be counted as present.
You will be marked late if you arrive late to class. In case you are late or you are unable to come to class, attain all materials learned during the time of your absence from your classmates.

It is YOUR responsibility to officially withdraw from the class if you determine that you can no longer participate. Failure to drop the class may result in a failing grade.

I will be available for questions before, during, and/or after our scheduled class time.
You can contact me via email. Include your name and subject, in the subject line. (e.g. John Doe –Assignment #4 Question).
I check my emails twice a day. I will be responding emails as soon as possible. Emails received over the weekend will be answered on Monday.
INSTRUCTOR ABSENCE OR TARDINESS
Emergencies do occur. If I do not show up at the scheduled start time for class, wait for fifteen minutes (unless otherwise notified by the Division office). After fifteen minutes you may leave with no penalty for absence or assigned work due for that class meeting.
USE OF ELECTRONIC DEVICES
If you’re using your phone, laptop, or tablet during class time for browsing, texting for unrelated topics, it can be disruptive and distracting to you and your classmates. Restrict yourself from using them during class time. You are welcome to use them for class-related activities.
If there is an emergency and you need to use your phone during class time, please step outside the classroom. All devices should be muted during class time.
EXAM POLICY
Exams will cover ALL assigned, read and lectured materials. All students must take the examinations on the scheduled dates. If you are unable to take the test due to an exceptional circumstance, make sure to talk to me in advance. If an emergency occurs, make sure to contact me as soon as possible.
IN-CLASS ACTIVITY POLICY
These activities are due on the day of the class or as specified by the instructor. You cannot earn credit for an activity if you are not present the day the activity takes place.
CLASS ASSIGNMENT POLICY
Make sure you are present when assignments are assigned in order to make sure you understand the instructions. All written assignments must be typed unless otherwise directed and assignments longer than one page should be stapled together. Assignments are due at the beginning of class on the due date. If you know you are not going to be present on the due date, make sure to turn in the assignment early in order to avoid losing points. Late assignments will not be accepted.
What if I’m having trouble organizing my ideas for assignments?
Take an early draft to the Learning Center located at U-202 Johnson Center and A-225 Chavez Building. Their phone number is (714) 564-6569 and their hours will be shown on this website Learning Center Hours.
Do I need to save my work?
Yes! It is important that you keep all graded and returned assignments. In the event of a grade discrepancy or if a grade is not recorded, returned assignments are your proof of the grades you earned.
What is the policy regarding cheating and plagiarism?
You should be familiar with the Academic Honesty Policy at Santa Ana College. There is absolutely NO tolerance for cheating in this class. Academic dishonesty or cheating is defined as an intentional act of fraud in which a student seeks to claim credit for the work or efforts of another without authorization. This includes assisting other students in acts of dishonesty or coercing students into acts of dishonesty, whether it is in coursework or on exams. There is absolutely NO tolerance for cheating in this class. Any student caught cheating or assisting another student in the act of cheating, will receive a zero score for the assignment or quiz.
Acts of cheating and/or plagiarism include but are not limited to the following:
- Working with another student on an assignment meant for individual completion, is considered an act of dishonesty. Files may not be shared.
- Working with another student or another person is considered an act of dishonesty on a quiz or on a project. Your work needs to be your own.
- If you have any questions regarding this policy or application of this policy, please let me know.
What if there is an emergency during class?
Please take note of the safety features in and close to our classroom as well as the evacuation route. The most direct route of evacuation may not be the safest because of roofing tiles or other potentially hazardous conditions. Similarly, running out of the building can be dangerous during severe earthquakes. During strong quakes, the recommended response is to duck-cover and hold until the shaking stops. Follow the guidance of your instructor. You are asked to go to the designated assembly area. Your cooperation during emergencies can minimize the possibility of injury to you and to others.
How do I earn points in this class?
A summary for the methods of assessment are listed below:
- Exams (140 points possible & 100 points Final Exam): Four exams and a final exam will be given. Exams are given at the beginning of class. If you are late, you will not be given extra time to complete the exam.
A week before finals, you will take the ServSafe Exam. If you PASS and you are satisfied, the score given by ServSafe will be recorded as your final exam score. If you do not PASS, you will have to take a non-ServSafe final exam.
The ServSafe passing score is 75% or higher. This is obtained by answering at least 60 out of 80 questions correctly. The exam has 90 questions; however there are 10 pilot questions that are for research purposes only. Exams are graded by ServSafe and scores will be available 2 days after you take the exam.
- In-class Activities (125 points possible): Four in-class activities will be selected at random during the semester for credit; you must be in class to be eligible for credit. Each activity is worth 25 points.
- Out of Class Assignments (35 points possible): There is 1 out of class assignment to complete for the semester.
- Group Presentations (60 points possible): There will be 1 group presentation. Details will be given during class time.
What percentage of my points comes from each assessment?
4 Exams (4 Exams: 1&2 40 points each; 3&4 50 points each) 180 points (36%)
