Course Description:  Scientific concepts of nutrition related to the function of nutrients in basic life processes and current health issues with emphasis on individual needs.

Course Learning Objectives: Upon successful completion of this course, you will be able to:

  • Describe the components of a healthy diet.
  • Identify the major functions and food sources of each macronutrient

       (carbohydrate, protein, lipids, water) and micronutrient (vitamins and minerals).

  • Explain the role of nutrients in maintaining health and preventing chronic disease.
  • Summarize the nutrients of concern during human growth and development,

and throughout the aging process.

  • Assess the quality of nutrition information presented in the media.

Student Learning Objectives:  

  1. Report and analyze their current intake and plan appropriate dietary changes to correct the identified nutritional deficiencies and excesses to comply with nutritional standards for general good health.
  2. Students will critically evaluate and demonstrate knowledge of nutritional science to identify reliable nutrition information.
