Instructor: Rachelle Vargas
Hi my name is Rachelle Vargas, and I have been in education for over 25 years. I have extensive experience working with children 3-12 years old. My journey began in Orange Unified School District as a Lead Teacher for the CARES after-school program; from there I became a School Readiness Coordinator overseeing our state preschool program, and then became the director of the Child Development Center. I have earned my BA in Child Development at Ashford University and then went on to earn my Masters in Education with a specialization in Family and Community. I’m a member of NAEYC, I’m involved in the Quality Start OC with the Orange County Department of Education, and I am a Professional Growth Advisor. I am also a proud mother of two grown college-age daughters. My daughters have graduated college, one is working towards her Masters to become an Occupational Therapist, and my younger daughter is in the credential program to become an elementary school teacher. I am enthusiastic about Child Development, and can't wait to share my experience in the classroom.
Course Description: This course examines the regulations, policies, procedures and best practices for early childhood curriculum related to health, safety, food, and nutrition while supporting child development through everyday planning and school programming. The importance of collaboration between families and health and school professionals to ensure physical and mental health of all children, families, and professionals will be explored. Students will have to show proof of negative TB test and obtain your immunization card results by the 4th week of the semester. Observation to local child development center will be included.
Course Learning Objectives:
- Outcome #1- Assess strategies to maximize the mental and physical health of children and adults in accordance with culturally, linguistic, and developmentally sound practices. (Assessment method: Course readings, MindTap activities, Discussions, Module Reflections, and written assignments).
- Outcome #2- Identify health, safety, and environmental risks in children’s programs. (Assessment method: Safety Program Observation & Checklist)
- Outcome #3- Analyze the nutritional needs of children at various ages and evaluate the relationship between health development and nutrition. (Assessment method: Snack Menu Plan assignment)
- Outcome #4- Evaluate regulations, standards, policies, and procedures related to health, safety, and nutrition in support of young children, teachers, and families. (Assessment method: Health Research paper & Title 5 or Title 22 reading, MindTap and course readings)
